Vegan January-Day 5: Peanut Protein Balls

For those days when you’re in a rush and you want something sweet, filling, and full of protein.

Prep work

 

Grab your favorite plant based protein powder (I personally recommend anything chocolate or vanilla flavored.)


Next up is non-dairy milk, I am biased towards oat milk as it pairs well with the oats you’ll be using. For every cup of oats you use, you’ll use half a cup of non-dairy milk.


Oats are the main component of this meal, 1 cup is needed.

2 tbsp of peanut butter.

2 tbsp of maple syrup.

2 tbsp of cinnamon.

2 tbsp of seed mix (I personally enjoy using pumpkin, flax, and sunflower seeds.)


Cooking Instructions

 

Pour your oats, plant based protein powder, seed mix, peanut butter, cinnamon, and maple syrup into a bowl.


Next, slowly add in the non-dairy milk and start to stir everything together. Take your time adding the milk, you want to have the mix appear like cookie dough; not too watery yet not too dry.


Once the ingredients are all combined together, break off chunks to roll into little balls.


Wa-la! Once you’ve rolled these tasty treats into balls, feel free to enjoy. Store in the fridge to enjoy later. I love bringing these with me when I travel so I have something tasty and filling to eat.
