Vegan January-Day 9: Easy Breakfast Potatoes

It's the morning: you got a limited amount of time and you wanna make something delicious and quick… I got you !

Prep work

 

Get out your hummus and potatoes, place them to the side.


Chop up your favorite veggies, for this recipe I used carrots, red cabbage, red and green peppers, onions (purple and spring), ginger, and several cloves of garlic.


For garnish; add in leafy greens as well as chopped up tomatoes and avocado.


You’ll need a pot and flat bottomed pan.


Cooking Instructions

 

Add water to a pot and bring to a boil. Once boiled, add your potatoes and let them cook for 15 minutes.


While those are cooking, put your chopped garlic and red onions into a heated flat bottomed pan.


Once your potatoes are done boiling, drain, chop into smaller pieces, and chuck them into the flat bottomed pan.


Grab your ginger and hummus; add those tasty treats to the pan.


Now it's time to add your chopped veggies into the pan and stir for several minutes.


Place your finished potatoes and veg into a bowl to get garnished with leafy greens, tomatoes, and avocado. I recommend pairing this with a bowl of fruit for the full, plant based meal.
