Raw Vegan Chipotle Burrito

Do you love healthy, delicious raw vegan recipes?

If you answered yes to any one of these, this recipe is meant for you !


  • 1 pound tomatoes cut into 1/4-inch pieces

  • 1/4 cup finely chopped red onion

  • 1/4 cup finely chopped fresh cilantro

  • 3 jalapeño peppers seeded, stemmed, and finely chopped

  • 1/2 a lime

  • Salt to taste


  • 2 cups of corn

  • 1/2 cup red onion finely chopped

  • 2 jalapeño seeded, and finely chopped

  • 1/4 cup fresh cilantro finely chopped

  • 1/2 a lime

  • Salt to taste


  • 2 large Hass avocados halved and pitted

  • 1 teaspoon fresh lime juice

  • 1/4 cup red onion finely chopped

  • 1/2 jalapeño chile stemmed, seeded, and finely chopped (see notes)

  • 2 tablespoons cilantro leaves finely chopped

  • Salt to taste

Other Ingredients Needed

  • Collard Greens (for the wraps)

  • Cauliflower rice

  • Mushrooms (seasoned to your liking: I did- paprika, red chili flakes, pepper, onion powder, chili powder, and garlic powder.)

  • Bell peppers

  • Corn
