Raw Vegan Chipotle Burrito

SALSA
1 pound tomatoes cut into 1/4-inch pieces
1/4 cup finely chopped red onion
1/4 cup finely chopped fresh cilantro
3 jalapeño peppers seeded, stemmed, and finely chopped
1/2 a lime
Salt to taste
CORN SALSA
2 cups of corn
1/2 cup red onion finely chopped
2 jalapeño seeded, and finely chopped
1/4 cup fresh cilantro finely chopped
1/2 a lime
Salt to taste
GUACAMOLE
2 large Hass avocados halved and pitted
1 teaspoon fresh lime juice
1/4 cup red onion finely chopped
1/2 jalapeño chile stemmed, seeded, and finely chopped (see notes)
2 tablespoons cilantro leaves finely chopped
Salt to taste
Other Ingredients Needed
Collard Greens (for the wraps)
Cauliflower rice
Mushrooms (seasoned to your liking: I did- paprika, red chili flakes, pepper, onion powder, chili powder, and garlic powder.)
Bell peppers
Corn
