January-Day 23: Three Bean Salad
Looking to eat something colorful, spiced to perfection AND get a lot of protein into your next meal?
Need a dish to bring to a party and not sure what to make? This is the recipe for you!
Prep instructions
Drain your canned goods: corn, black beans, pinto beans, and kidney beans.
Chop up 1 red onion, 1 large avocado, a handful of tomatoes, and some cilantro. Chop a lime or lemon in half to squeeze at the end.
Measure your spices: 1 teaspoon of smoked paprika, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of pepper.
Cooking instructions
In a large bowl, mix everything together. That simple! :)
Ways to enjoy this meal: pair it with corn chips as a dip, can be used as taco mix, or served on top of a bed of rice and/or leafy greens.
