Vegan January-Day 19: Raw Vegan Taco Salad

This salad is full of nutrients, fiber, and delicious goodness! The best part you wonder? It is oil free, salt free, dairy free, meat free, and your friends & family will be asking you for the recipe after trying it.


You might be wondering, what "raw vegan"is-this recipe means there will be no cooking necessary.

Prep instructions

 

For this recipe, you'll need a food processor or a blender.


Chop and place your veggies for the salad to the side: leafy greens, cucumbers, cherry tomatoes, red onions, corn, peppers, and an avocado.


Next, measure out the ingredients for the taco "meat" and the "cheese."


Ingredients needed for the taco "meat"

walnuts 1/2 cup

sunflower seeds 1/2 cup

sundried tomatoes 1/2 cup

red onions 1/4 cup

garlic 1 clove

chili powder 1 tablespoon

paprika 1/2 tablespoon

cumin 1/2 tablespoon


Ingredients needed for the "cheese"

soaked cashews 1 cup

nutritional yeast 2 tablespoons

garlic 1 teaspoon

yellow mini peppers 1/2 cup

water 1 1/2 cup

red onions 1/2 tablespoon

paprika 1/2 tablespoon

turmeric 1 teaspoons


Cooking instructions

 

Place all your ingredients for the taco "meat" into a food processor and process until you have a good consistency.


Next, combine all your ingredients into a food processor for your "cheese" and blend until smooth.


Lastly, place all your veggies into a salad bowl, add in the taco "meat" and drizzle the "cheese" on top. Options to add in chips or these raw vegan corn chips.
